Potato mash dish
A simple south indian style potato side dish which can be eaten along with Naan, Roti’s or rice.
Ingredients:
- Russet Potato – 3-4 (boiled)
- Lemon – 1
- Spices
- Mustard Seeds – 1/2 teaspoon
- Vegetable Oil – 1/2 teaspoon
- Turmeric Powder
- Coriander Leaves
- cumin seeds – 1/4 teaspoon
- Green Chilies – 1
- Ginger Julienne
- Salt (to taste)
Cooking time – 20 minutes
Cooking Method(s) – Microwave or stove
Steps to cook:
Microwave Method:
- Wash the potatoes well and then put them into a microwave safe bowl and fill with water to cover them.
- Place the bowl with potatoes into the microwave and cook it till they are fully cooked (10 minutes in my microwave, but it may differ with make and brand used.)
- Once it is cooked, remove them, let them cool down and then mash them roughly, with lumps or broken into pieces.
- Put vegetable oil, cumin seeds and mustard seed in another microwave safe bowl and cook it in microwave until the mustard seeds pop. (time will vary depending on the microwave brand)
- Put the mashed or finely chopped potatoes into the bowl with mustard seed, put the turmeric powder, squeeze 1/2 lemon juice, ginger julienne’s and roughly chopped coriander leaves. Mix them well.
- Place this mixture into the microwave and cook for 4 minutes.
- Take it out and add salt to taste before serving,
Stove-top Method:
- Wash the potatoes well and then put them into a pressure cooker (1 whistle) or normal bowl fill with water and cook them on top of stove till they are cooked
- Once it is cooked, remove them, let them cool down and then mash them roughly, with lumps or broken into pieces.
- Put vegetable oil, cumin seeds and mustard seed in another pan, place it on the stove and wait until the mustard seeds pop.
- Put the mashed or finely chopped potatoes into the pan put the turmeric powder, ginger julienne’s and roughly chopped coriander leaves. Mix them well.
- Allow this mixture to cook for 10 minutes, stir them occasionally so as not to stick on to the pan
- Add salt to taste before adding some more freshly chopped coriander leaves and squeeze 1/2 lemon juice before serving.
